Arlenes Citrus and Avocado Salad

Our oldest son, Don, is the President and CEO of Hale's Groves in Florida and that is not only something we are proud of, but it something that helps to keep us hale and hearty in our old age as Don has set up a gift fruit of the month program for his old mom and dad.

This month, as it is every late fall, we get a wonderful large box of incredibly sweet ruby red grapefruits and navel oranges and though it seems like a lot for just the two of us, it really is not when we decide to incorporate them into our daily diets in other ways as just trying to consume some grapefruits and oranges.

I have many uses for them, but one of them is to try and use them with another healthy fruit that I love and that is avocados which are plentiful in our favorite produce market at this time of year.

Since I only make this daily for just the two of us I use one grapefruit and one orange per person and 1 avocado for the two of us.

First I cut the top and bottom off of each orange and grapefruit and then I slice off the skin or rind of each one.

Next I section out the slices of fruit between the membranes thus giving me what the citrus industry calls the selects. If there are any seeds I remove them and discard.

This all goes into our individual serving dishes where I have a colorful display of both ruby red grapefruits and navel oranges.

Next I cut the avocado in half, remove the pit with a spoon and slice each half into 4 to 6 sections. Now I gently remove the skin from each section and put them in with the citrus.

I make a dressing of 1/8 th cup of raspberry vinegar and 1.8 th cup of honey which I have mixed well. I serve this is a separate bowl with a small ladle and we each can add the amount of dressing we want to the citrus and avocado treat.

This is a great healthy way to start the day or even for a special treat in the evening and occasionally I may use it as a dessert when I have served a rich and fully meal as it gives a nice final treat to end the meal.
